Ingredients
2 African horned cucumber
200g grilled chicken
1 teaspoon parsley
1 teaspoon turmeric + pinch black pepper
1 Tablespoon apple cider vinegar with mother culture
1 teaspoon honey + 1 teaspoon orange juice or lemon juice
1 medium avocado
1 cup cooked nyemba (black eyed peas)
Method
1. Peel cucumber and cut into rings.
2. Cut avocado into pieces and drizzle lemon juice on top.
3. Arrange on a platter starting with cooked nyemba at the base. '
4. Add chicken strips, followed by cucumber slices, then avocado slices.
5. Garnish with carrot sticks or cherry tomatoes or beetroot pickle.
5. Prepare dressing using honey, turmeric, black pepper, citrus juice, vinegar, and parsley.
6. Drizzle on top and serve immediately.
